Paleo diets don’t have to be difficult. This easy fall soup is both healthy and delicious. The fresh ingredients mix combined in a warming soup are perfect for a cool fall evening. We hope you enjoy!

Ingredients

4 tbsp coconut oil

2 chicken breast

1 onion, diced

4 cloves garlic

3 tbsp ginger, grated

4 tbsp green chilli paste

1 lime zested & then sliced for garnish

1L chicken stock

1 can coconut milk

100 grams maitaki mushrooms

2 cups snow peas

3 green onions, thinly sliced

salt

Preheat over 425F. Heat 2 tbsp coconut oil in a large map over medium heat. Season chicken with salt & pepper. Add to pan and grill each side 2 minutes until golden. Remove chicken from pan & bake 15-20 minutes. Add 2 more tbsp. of coconut oil to pan with onion and chilli to pan and cook until golden. Add garlic, ginger, green curry paste and stir until fragrant, about 1 minute. Add lime zest, chicken stock, coconut milk and maitaki mushrooms. Shred cooked chicken breast and add to soup. Bring to a boil then reduce heat to minimum and remove the lid to reduce and thicken the soup. Add snow peas and green onion Garnish with cilantro and lime wedges.
